Certified Angus Beef
Montesinos Grilled Sirloin Steak

"For a more intense BBQ flavor, rub steaks with the Stonewall Kitchen Steak & Barbecue Seasoning Blend in the morning or the night before, cover and refrigerate until ready to grill."

Ingredients
  • 3 "Certified Angus Beef" sirloin steaks, about 1.5 to 2 pounds each
  • 2 Tbsp Stonewall Kitchen Steak & BBQ spice rub
  • 1/4 cup extra virgin olive oil
  • 8 oz Montesinos "Cana de Cabra" ripe goat cheese, rind cut off, cut in six 3/8-inch slices
  • Cooking spray of your choice


Directions
 
  1. Preheat grill on HIGH for 10 min.
  2. Sprinkle both sides of steaks with Stonewall Kitchen steak & barbecue seasoning rub, gently press into meat. Drizzle with basting oil, rubbing gently into meat.
  3. Clean grill with wire brush; using a soft cloth, coat grill with cooking spray.
  4. Sear steaks, cover closed, about 5 min until steak has changed color one-quarter of the way up from bottom. Turn over; baste by brushing seared side with basting oil.
  5. Reduce heat to LOW (MEDIUM for cuts thinner than 1 inch); cook 1-3 min. Turn over again; baste. Close cover.
  6. Check internal temperature by inserting thermometer halfway into thickest part of meat. Refer to chart below for final internal temp. Just before removing from heat, place cheese on steaks to melt.
  7. Remove steaks from grill when internal temperature reaches desired doneness; transfer to clean platter. Let rest for 5-10 min.


Final Beef Temperatures:
Rare: Very red, warm center 125 degrees
Medium: Pink, warm center 130 degrees
Well: Pink, very warm center 145 degrees and above
