Beef Tenderloin
With Mustard & Fresh Herbs


Ingredients
  • 1 beef tenderloin, trimmed, about 2 1/2 pounds
  • Cooking spray of your choice
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/3 cup finely chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 1 1/2 tablespoons finely chopped fresh rosemary
  • 3 tablespoons Dijon mustard


Directions
 
  1. Prepare grill.
  2. Lightly coat beef with cooking spray. Sprinkle evenly with salt & pepper.
  3. Place beef on grill rack coated with cooking spray.
  4. Reduce grill heat to medium. Grill tenderloin 30 minutes or until thermometer registers 145 degrees or until desired degree of doneness. truning to brown on all sides.
  5. Remove beef when done and let stand 10 minutes.
  6. Sprinkle parsley, thyme and rosemary in an even layer on a 18 by 15 inch sheet of plastic wrap.
  7. Brush mustard evenly over beef.
  8. Place beef in herb mixture on plastic wrap and roll beef evenly over herbs.
  9. Slice and serve.

Final Beef Temperatures:


Rare: Very red, warm center 125 to 130 degrees.
Medium: Pink, warm center 135 to 140 degrees.
Well: Pink, very warm center 140 to 145 degrees and above.
