Steak & Bean Burrito


 Ingredients
    • Cooking spray of your choice
    • 8 ounces boneless top round london broil steak, cut into 1/4-inch strips
    • 1 and 1/2 cup chopped onion
    • 2 garlic cloves, minced
    • 3 cups canned black beans, rinsed and drained
    • 1 cup fat-free beef broth
    • 3/4 teaspoon crushed red pepper
    • 1/2 teaspoon ground cumin
    • 4 flour tortillas, 8 inch size
    • 3/4 cup sour cream, divided
    • 1/2 cup salsa of your choice, divided
    • 3/4 cup finely chopped romaine lettuce

     Directions

     
     
    1. Heat a nonstick skillet coated with cooking spray over medium-high heat until hot.
    2. Add beef and sauté for 2 minutes. Remove beef from pan.
    3. Add onion and garlic to pan and sauté for 2 minutes. Stir in beans and broth and cook 1 minute. Mash bean mixture with a fork then stir in pepper and cumin.
    4. Spread bean mixture over tortilla and top with 2 tablespoons sour cream, spreading to cover.
    5. Place beef strips down center of tortilla and top with 1 tablespoon salsa.
    6. Roll up tortilla; placing seam side down on a microwave-safe plate. Microwave at HIGH 1 minute or until burrito filling is hot. Top with 1 tablespoon sour cream, 1 tablespoon salsa, and lettuce.
