"Madison" Memphis Style
Braised Barbecue Spareribs


Ingredients
  • 1 extra heavy-duty, large Reynolds "Hot Bags" foil grilling bags
  • 3 to 4 lbs bone in country style pork spareribs, halved
  • 4 Tbsp Stonewall Kitchen brand BBQ spice rub seasoning
  • 1 bottle Stubbs orginal style 18 oz BBQ Sauce
  • 1 12 oz bottle of the beer of your choice
  • Salt and pepper to taste

Directions
 
  1. Preheat grill on HIGH 10 min.
  2. Preheat oven to 350 degrees.
  3. Clean grill with wire brush; using soft cloth, coat grill lightly with vegetable oil.
  4. Season each side of ribs generously with Stonewall Kitchen barbecue seasoning. Sear rib halves on grill, 3-4 min per side; do not cook through.
  5. Place foil bag in shallow roasting pan; arrange ribs in bag.
  6. Whisk together beer and BBQ sauce in medium bowl; pour over ribs in bag. Double-fold open end of bag to seal.
  7. Bake on center rack of oven 2 1/2 to 3 hours or until tender. Remove from oven. Use oven mitts and cut open foil bag with sharp knife. Carefully fold back bag to avoid steam. Transfer ribs to clean platter; season to taste with salt and pepper.
  8. Carefully transfer sauce to medium saucepan; skim fat from surface and discard. Heat to boiling on HIGH . Reduce heat and simmer, stirring occasionally 4-5 min, until reduced by one-quarter. Season to taste with salt and pepper. Serve sauce over ribs.
  9. Qick & Easy Time Saving Tip: Do ahead by completing steps 1, 2, and 4. Place seared ribs in large pan and cover with sauce. Cover and chill. When ready to finish cooking, transfer to bag and proceed with step 5.
