Pork With Apples & Onions
Ingredients
6, about 3/4 inch thick, 6-ounce each, boneless center-cut pork chops (service meat department)
1 teaspoon salt (aisle # 11)
½ teaspoon black pepper (spice rack end of aisle # 11)
Cooking spray of choice (aisle # 11)
1 tablespoon olive oil (aisle # 11)
2 large yellow onions, each cut into 8 wedges (produce department)
2/3 cup dry white cooking wine (aisle # 1)
4 Granny Smith apples, peeled and each cut into 6 wedges, about 1 ½ pounds
(produce department)
1 tablespoon lemon juice
(produce department for lemons or lemon juice in aisle # 2)
Chopped fresh parsley, optional (produce department)


Directions
 
1. Sprinkle both sides of pork chops with salt and pepper. Place a large covered pan which can be used in the oven or a Dutch oven pan coated with cooking spray over medium-high heat until hot. Add 3 chops, cook 4 minutes on each side or until lightly browned.
2. Remove chops from pan. Repeat the procedure with remaining chops. Remove pork chops from pan and set aside.
3. Heat oil in pan.. Add onions, and cook 8 minutes or until golden brown, Stirring occasionally. Add the wine, and cook 1 minute. Return pork chops to pan, nestling them into onion mixture. Reduce heat to medium-low, cover and cook 15 minutes.
4. Add apples to pan, cover and cook 25 minutes or until chops are tender. Remove pork chops from pan; keep warm. Increase heat, and bring apple mixture to a boil, and cook 10 minutes or until liquid almost evaporates. Stir in the lemon juice.
5. Serve chops with apple mixture. Sprinkle with parsley, if desired.
