Succulent Roasted Chicken With Cumin, Honey & Orange


Ingredients

1 roasting chicken, about 3 pounds
1/4 cup honey
1 ½ tablespoons grated orange rind
1 tablespoon ground cumin
1/4 teaspoon salt
1 teaspoon black pepper
1 fresh garlic clove, minced


Directions
 
1. Preheat oven to 400 degrees
2. Remove and discard giblets from the chicken. Rinse chicken with cold water; pat dry. Trim excess fat. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers, gently pushing between skin and meat.
3. Combine honey and remain ingredients. Rub honey mixture under loosened skin and over breast and drumsticks. Lift wing tips up and over back; tuck under chicken.
4. Place chicken, breast side up, on a foil-lined broiler pan. Pierce skin several time with a meat fork. Insert meat thermometer into meaty part of thigh, making sure not to touch bone. Bake at 400 degrees for 30 minutes; cover loosely with foil. Bake additional 40 minutes or until the thermometer registers 180 degrees. Let stand for 10 minutes.
5. Discard skin.
