Turkey Cutlets With Smoky Black Bean Sauce
Serve with black beans and tortilla chips.
Ingredients
- 1/4 cup fat-free, less-sodium College Inn chicken broth
- 2 teaspoons McCormick onion powder
- 1 teaspoon bottled minced garlic
- 1/2teaspoon McCormick chili powder
- 1/2 teaspoon white wine vinegar
- 1/8 teaspoon salt
- dash of McCormick ground red pepper
- 1 19 ounce can Progresso black beans, rinsed and drained
- 1 can - 14.5 oz can Delmonte plain diced tomatoes
- 1/2 teaspoon Hickory Liquid Smoke flavoring
- 2 tablespoons IGA butter
- Cooking spray of your choice
- 8 turkey breast cutlets - about 2 ounces each
Directions

- Combine first 9 ingredients in a small saucepan and bring to a boil. Reduce heat, and simmer 8 minutes.
- Stir in smoked seasoning; cook for 2 minutes. Remove from heat and stir in butter.
- While sauce cooks, heat a large nonstick skillet over medium-high heat. Sprinkle turkey with 1/8 teaspoon salt. Coat pan with cooking spray. Add turkey to pan; cook 2 minutes on each side or until done.
- Serve with sauce.
