Chocolate Cookie Sandwiches

What you need:

+ 4 squares semi-sweet chocolate squares
+ 1-1/2 c. granulated sugar
+ 3 Tbsp. canola oil
+ 2 Tbsp. milk
+ 2 tsp. vanilla
+ 3 eggs
+ 2 c. flour
+ 2 tsp. baking powder
+ 4 oz. cream cheese
+ 1/4 c. canola margarine
+ 1 tsp. vanilla
+ 2 c. confectioners' sugar
What to do:
1. Melt chocolate over low heat in microwave or heavy saucepan. Cool. In a large bowl combine sugar, canola oil, milk, vanilla, eggs and melted chocolate. Beat well.
2. Sift together flour and baking powder and add to chocolate mixture. Mix well. Cover and chill for 1-2 hrs. or until dough is easy to handle.
3. Preheat oven to 375°F. Shape dough into 1 in. balls. Place 2 in. apart on a cookie sheet. Flatten each ball with your fingers.
4. Bake for 10-12 min. or until tops are lightly browned. Remove and cool on wire rack.
5. To prepare filling: In a bowl mix together cream cheese, margarine, vanilla and icing sugar. Beat until mixture is smooth and well combined. Place filling in between two cookies.
