Steamed Mussels with Garlic, Wine, and Cilantro
Ingredients
1/3 cup dry cooking white wine(aisle # 1)
4 pounds fresh small mussels, scrubbed and debearded-cleaned(service seafood department)
1 tablespoon cornmeal(aisle # 11)
8 garlic cloves, thinly sliced(produce department)
1 1/2 cups water
3/4 cup dry white wine, can also use dry white cooking wine
(aisle #1)
1/4 teaspoon freshly ground black pepper(spice rack end of aisle #11)
1/2 cup freshly chopped fresh cilantro(produce department)
Directions

1. Place mussels in a large bowl and cover with cold water. Sprinkle with cornmeal; let stand 30 minutes. Rinse mussels and drain.
2. Heat the oil in a large stockpot over medium high heat. Add garlic and saute 3 minutes. Add water and wine and bring to aboil. Add mussels; cover and cook over medium high heat for 6 minutes or until shells open, stirring well after 3 minutes.
3. Remove from heat; discard any unopened shells. Sprinkle with pepper and cilantro. Remove mussels with a slotted spoon and arrange in each of 8 shallow bowls.
