So Easy... Pecan Encrusted Fresh Haddock Fillets
Ingredients
- 1/2 cup Progresso unseasoned bread crumbs
- 2 oz pecans, finely chopped, about 1/2 cup.
- Salt
- Pepper
- 3 Tbsp extra virgin olive oli
- 4 haddock fillets, about 6 ounces each
- Cooking spray of your choice
Directions

- Preheat oven to 450 degrees.
- Coat medium baking sheet with cooking spray.
- Mix bread crumbs and pecans in medium bowl. Season to taste with salt and pepper.
- Drizzle each side of fish with extra virgin olive oil and sprinkle with bread crumb mixture. Transfer to baking sheet.
- Bake 12-15 min, until golden-brown, and internal temperature reaches 130 degrees. Check by inserting thermometer halfway into thickest part of fillet. Let rest at least 2 min.
