Quick & Easy Italian Style Stuffed Bell Peppers

Don't let the microwave fool you, this dish is truly delicious, quick and so, so easy!

Ingredients
  • 1 lb Roberts Own Italian - Garlic - Cheese style Bell & Evans poultry chicken sausage, casing removed (service meat department)
  • 1 cup instant Minute brand rice, uncooked
    (aisle # 7)
  • 1 jar Classico brand 26 oz. Italian Sausage style pasta sauce (aisle # 7)
  • 1/3 cup Ore Ida brand chopped onions
    (frozen food department)
  • 1 large egg (dairy department)
  • 2 Tbsp chopped fresh oregano
    (produce department)
  • 3 large bell peppers, any color, seeded and halved lengthwise (produce department)
  • 1/2 cup freshly grated Pecorino Romano cheese (food court cheese case)

Directions

  1. Mix sausage with rice, 1 cup sauce, onions, egg and oregano.
  2. Stuff peppers with sausage mixture.
  3. Place peppers, skin-side down in microwave dish. Pour remaining sauce over peppers.
  4. Microwave, covered, on HIGH 20 min.
  5. Uncover; sprinkle peppers with cheese, recover and let stand 5 min before serving.
